Ever wonder why some bread looks like it stepped straight out of a magazine—that deep, golden-brown glow—while others just look… beige? It’s not just about cranking up the heat. It’s about the wavelength. In our convection ovens, we use far-infrared (FIR) heating. The goal is to hit the surface of the dough hard enough to get that color, but not so hard that you turn the inside into a crouton. Finding the sweet spot Here’s the thing: if your infrared intensity is too low, your bread just dries out. You’re left with a pale loaf that’s lost all its moisture. But go too high? You’ll burn the tips before the center even wakes up. We spend a lot of time tweaking the wattage and surface load. We want the heat to soak into just the outer 2-3mm of the crust. But there’s a catch. If you’ve got high-velocity fans blowing in there, they can actually strip away the heat. It’s like trying to keep a candle lit in a windstorm. In those cases, we use higher-density elements just to keep the surface temperature where it needs to be. The gear we use We stick with high-purity quartz tubes. Why? Because they can handle the shock of heating up and cooling down fast without cracking. Since every oven is different, we customize the length and voltage to fit whatever wiring you’ve already got in place. Sometimes, we even coat the elements. This pushes the energy further into the far-infrared range, meaning less heat wastes away into the oven walls and more of it actually hits the bread. The trade-offs Now, you might think “more wattage equals better browning,” and sure, it’s faster. But there’s a price. If you jam too much power into a short tube, you’re going to burn it out way sooner than you should. You also have to make sure your PID controllers are dialed in, or you’ll deal with temperature overshoots. Plus, keep an eye on your ventilation. When you ramp up the heat density, your oven’s electronics bay can get swampy with ambient heat. You’ve got to give those components room to breathe so they don’t fry while your bread is browning.
